Roasted Sweet Potatoes

 

It almost doesn’t matter how you prepare them – sweet potatoes are delicious! Baked, fried, grilled, pureed, steamed, roasted – it never disappoints. And what makes them taste even better is knowing how good they are for us. Sweet potatoes are jammed packed full of vitamins and minerals like;

 

  • Vitamin A (in the form of beta-carotene)
  • Vitamin B1& B2
  • Vitamin B6
  • Vitamin C
  • Vitamin D
  • Manganese
  • Copper
  • Pantothenic acid
  • Iron
  • Potassium
  • Fiber
  • Niacin
  • Phosphorus

 

And that list translates into healthy hearts, bones, skin, teeth, red and white blood cell production, and support for our immune system. Vitamin A, in particular, is essential for your skin health! It helps promote collagen repair and growth, and sweet potatoes have a high amount of vitamin A.

 

Sweet potatoes are also a good source of energy. So when you’re thinking about what side to add to lunch for dinner, do your taste buds and your body a favor and choose a healthy and delicious sweet potato!

  1. I have loved sweet potatoes since I was a child. I like them because they are sweet and satisfying and they enhance almost every meal choice.

    I far prefer sweet potato or kumera as we call them here in New Zealand. They have more flavour than ordinary spuds and are obviously better for us! They cost a little more but I find you don’t need as much.

    thanks for giving the sweet potato tip is good for skin but I eat alot of sweet potatoes anyway.
